it only take a vey little bit of yeast, an equal amount of yeast would make it a sludge and it would also be very expensive.

I missed how much yeast goes in.... fruit and sugar are equal.. so would the yeast be equal also? Or a bit less perhaps...?

Wine continues to age in the bottle, i.e. teh flavours are still developing, but not ferment, fermentation has usually stopped because the wine shouldn't contain yeast at this point.
